These vegan oat bars make the perfect guilt free snack! Have them at breakfast, tea, or whenever you get that craving for something sweet. Super filling and ideal on the go! There’s something so satisfying about the combination of dark chocolate, pistachios and cranberries, especially packed together in an oat bar, the flavours work so well together.

Best part? this recipe is extremely easy to make!

Some notes before you begin:

TOASTING THE OATS AND NUTS:

It’s really important to toast the oats and nuts as this adds a deep and rich nutty flavour to these oat bars. This is extremely easy to do and it enhances the taste significantly.

WHICH BAKING TRAY/PAN TO USE:

You must use a high side baking tray in which the oat mixture can be pressed into a compact and even layer. When lining the baking tray, ensure that the parchment paper is longer on the sides, so that the oat bars can be easily lifted out from the baking tray/pan.

SUBSTITUTIONS

You can swap the vegan dark chocolate for regular dark chocolate if you like. Make sure to use a good quality dark chocolate for this recipe as it’ll enhance the taste a lot. You can also swap/add seeds and nuts of your choice to this recipe. Feel free to tweak it according to your tastebuds!

Ingredients

Instructions

  1. Preheat your oven to 175 °C/350 °F and toast the oats and nuts for about 20 minutes.
  2. Meanwhile, in a small bowl, mix together all of the wet ingredients (maple syrup, coconut oil and almond butter) and set aside.
  3. In a large bowl, add the toasted oats, nuts and all of the other dry ingredients.
  4. Combine the wet ingredients with the dry ingredients. Mix thoroughly.
  5. Line a baking tray/pan with parchment paper and tip the oat mixture into it. Press the mixture firmly into an even layer (the best way to do this is by using the bottom of a flat glass). You must press hard so that the bars cut easy and don't falling apart once they have set. 
  6. Melt some extra dark chocolate in the microwave until it’s completely smooth. 
  7. Drizzle the melted chocolate all over the flattened mixture and place in the fridge to set for at least 1-2 hours.
  8. Slice into bars and enjoy.

Storage:

Store in an airtight container.
