Ok so I’ll start by admitting, I’ve never been the biggest fan of granola. I’ve always found shop bought granola to be boring and too pricey. to make it worse, it usually contains a nut, dry fruit or seed that I just don’t enjoy the taste of.

But.. ever since I started making my own granola at home, I’ve become addicted. when I realised how easy it is to make at home, I had to try it and I’ve been experimenting with different recipes ever since!

The recipe I’m sharing with you today is the perfect combination of sweet and nutty (but not too sweet) and you can have it with your choice of milk or greek yogurt, topped with your favourite fruits and berries (my personal favourite is sliced bananas).

Granola makes the perfect breakfast and is also a great snack for when you don’t have much time.

This recipe is energy boosting, filling and super tasty!

The best part is, the process is super simple.

SUBSTITUTIONS:

You can substitute or add different nuts and seeds that you prefer. I often replace the sunflower seeds with pumpkin seeds and add walnuts to this recipe too.

GRANOLA CLUSTERS

If you prefer chunky granola clusters, simply stir less when you remove the baking tray from the oven at the halfway point and do not mix after baking. This will allow the mixture to stick together so that clumps are formed.

Ingredients

Instructions

  1. Preheat the oven to 135°C/275°F.
  2. In a large bowl, mix all of the dry ingredients together (oats, seeds, nuts, coconut, salt and cinnamon powder).
  3. In a separate bowl, whisk together the wet ingredients (maple syrup, coconut oil and vanilla extract). Ensure that the coconut oil is completely liquid, warm in the microwave for about 15 seconds if necessary.
  4. Combine the wet ingredients with the dry ingredients and mix well.
  5. Transfer the granola mixture into a baking tray, spread evenly and press down so it’s compact. Place into the oven.
  6. After 25/30 minutes, remove the tray from the oven and give the granola a stir to make sure it bakes evenly.
  7. Place back into the oven and remove when done. It should be a golden and crispy.
  8. Wait for the granola to cool down completely before putting it into a container. Optional: if you would like to add chocolate chips to your granola, you can put them directly into the container right at the end and shake well so that the chocolate chips are mixed in well.

Storage:

Keep in an airtight container at room temperature. Lasts at least 2 weeks.
